The story of the Pala family intertwines with the rich tapestry of Sardinia’s winemaking heritage – a story deeply woven into the island’s history, its sprawling vineyards, and its ancient inhabitants.

Sardinia stands as one of the oldest lands in the Mediterranean region. However, Sardinia is more than an island; it’s a microcontinent, offering a mosaic of breathtaking landscapes and unique ecosystems. From snow-capped mountains to Europe’s longest canyon, from the continent’s sole desert to verdant plains and limestone hills cascading towards the sea—these diverse terrains provide the backdrop for Pala’s vineyards, nestled amidst this stunning natural tableau.

For the rosé vinification process, the grapes undergo partial skin maceration for a brief period, typically just a few minutes. This is followed by a gentle clarification of the must through sedimentation. Fermentation then takes place at a consistent temperature of 16°C over a period of two weeks in stainless steel vats. Prior to bottling, a light filtering step is undertaken to ensure clarity while preserving the wine’s aromatic bouquet and freshness. Bottling occurs while the wine is still youthful to maintain its vibrant character and lively appeal.

This rosé’s aroma is full of red fruits, including cherry, raspberry, and blackberry, complemented by delicate floral undertones and a subtle hint of salinity. On the palate, it is smooth with harmonious balance between its aromas and flavours. The wine’s refreshing acidity adds brightness, whilst having good structure, finesse and depth.

Food pairing suggestion: Best enjoyed as an aperitif, but try with seafood risotto.

From the producer: We wanted to make a rosé that was able to revive the old tradition of Sardinian rosé, with an eye to modernity, Chiaro di Stelle, starlight in Italian. The rosé that has enthralled even France.
