Gaia Wines Assyrtiko Thalassitis is a white wine made from the Assyrtiko grape variety grown on the island of Santorini, Greece.  The vineyards are trained in the traditional basket shape, known as the “kouloura” method, which helps to protect the grapes from the strong winds and intense sun of the island.

The wine is characterised by a bright, pale yellow colour with green hues. On the nose, it has a complex aroma profile that includes notes of citrus, white peach, pear, mineral, and sea salt. On the palate, it is dry, with high acidity and a minerality that reflects the volcanic soils of the island. The wine has a medium-bodied structure with a long, refreshing finish.

The Assyrtiko Thalassitis wine is fermented and aged in stainless steel tanks to preserve the freshness and minerality of the grape. The wine is unoaked, which allows the natural flavours and aromas of the grape to shine through. It is considered a wine of great ageing potential and can be enjoyed for up to 8-10 years from the vintage date.

Food pairing suggestion: The wine pairs well with seafood, grilled fish, and white meats. It is also a great match for traditional Greek dishes such as moussaka, dolmades, and feta cheese.

It is best served chilled at around 10-12°C and should be decanted for about 20 minutes before serving to allow the wine to open up and express its full potential.
