In May 1968, when student protests begin to take place, 15-year-old Aldo Vaira joins the crowd of teenage demonstrators who thronged Turin’s streets. If Aldo hadn’t been found by his father and sent right away to Barolo to spend the summer on the grandparents’ farm, distant from turmoil, the plot may have taken a different route.
The dream of a life spent in the beauty and freedom of nature is sparked by those months spent between the fields and vineyards.
He joins Suolo e Salute in 1971 and starts Piedmont’s first organic farming operation. From the very beginning, Aldo goes against all established practices, and earns himself the title of “the most modern of the traditionalists and the most traditional of the modernists”.
Aldo, his wife Milena, and their children Giuseppe, Francesca, and Isidoro continue to manage the land according to organic principles today, producing beautiful Barolo, Barbera, Docetto, as well as less conventional Riesling.
Dolcetto is a very delicate variety and needs the right exposure, care, and attention. Vajra’s Dolcetto is only grown in the best vineyards. This wine’s outstanding freshness and enticing fruitiness give this nostalgic feeling reminiscent of vintage perfumes. This red is super-fresh, full of flavours of sour cherry, violets, and summer field. Delicate tannins elevate the wine, balancing the vibrant acidity.
Food pairing suggestion: Penne alla vodka with Italian sausage.
