The Domaine Jones winery is located in an old stone building near Perpignan. At Domaine Jones, the winemaking philosophy combines traditional, down-to-earth farming methods with innovative techniques to capture the essence of the terroir and the local area. These hand-crafted wines offer surprising purity and freshness, thanks to the relatively high altitude of the vineyards, which is unusual for this region.
Katie is producing some of the region’s most esteemed wines. She took a bold step in 2008 by purchasing a vineyard in Languedoc, where she had spent many years living and working. Transitioning from the wine industry to producing her own wine was a significant change.
Although she occasionally questioned her decision, these doubts were fleeting because things have gone remarkably well. Her wines have received high praise from experts, won awards, and led to the acquisition of additional wineries.
Katie has very strict criteria when selecting the vineyards: the vines must be old (the older, the better), they must be on slopes, and they must offer a great view. This Carignan comes from two such vineyards, one in Paziols and one in Tuchan. These vines, over 100 years old, impart a surprising freshness and youthfulness to the wine despite their age.
Food pairing suggestion: Roast pork shoulder.
