Alta Pavina is pioneering producer outside the Ribera del Duero region, renowned for producing Spain’s finest Pinot Noir since 1985. The winery is located on an estate situated in the municipal area of La Parrilla (Valladolid).
Hugo and Diego Ortega, the founders of Bodegas Alta Pavina, adhere to a principle in their work: “Though viticulture and oenology are grounded in science, the craft of winemaking transcends into an art form, demanding creativity and innovation.”
This Verdejo is crafted under the IGP Vino de la Tierra de Castilla y León designation, from the vines at an altitude of 1,000 meters. This area of limestone-franco soils on the banks of the Duero River offers a continental climate with scarce precipitation and notable temperature contrasts. Wines with strong personalities need to be born in a special terrain, as is the case on the estate of Pago de la Pavina. The vineyard surrounding Bodegas Alta Pavina covers an area of 35 hectares and consists of two grape varieties: Pinot Noir and Cabernet Sauvignon, and the grapes for their white wines are sourced from trusted growers in the region.
Fermented in stainless steel tanks using native yeast from the region at a temperature between 16 and 18°C.
This Verdejo displays a pale yellow hue with hints of green when poured into a glass, followed by intense and potent aroma. Packed with aromas of citrus, apples, and tropical fruits such as melon and grapefruit, it is complemented by herbaceous notes and white floral scents.
On the palate, it presents a well-structured profile, delivering softness and freshness, followed by a subtly bitter finish.
